On sidearm weapons, open the rear grip slot in the Gunsmith and select the Akimbo grip as an attachment. Nearly all of the sidearm weapons will have this option, including the COR 45 and the Renetti.

Akimbo is a modifier that is available on grip attachments for secondary weapons. You first have to unlock the Akimbo grip attachment for your gun and then equip it using the Gunsmith for it to work.
