The Brown Birch Bolete (Leccinum scabrum) is a common mushroom that’s relatively beginner friendly, being quite easy to identify with no toxic lookalikes. It must be cooked well before eating, the stem in particular wants to be cooked for 15 minutes or more just to be on the safe side, as otherwise it can contain indigestible polysaccharides that can cause tummy ache/nausea etc. in some people. I’ve grown to like this mushroom more than I did at first - although it’s not the best mushroom to use

As a follow up to the Satan’s Bolete, here is another blue staining red-pored bolete. This is the #LiverBolete or #Suillellusamygdalinus, a mycorrhizal species that I often see fruiting early fall through late winter into spring. Primarily I see this in association with coast live oak, but also with other oaks, madrone, and manzanita. Found one of my favorite edible mushrooms, a Butter Bolete (Butyriboletus autumniregius). It is a mycorrhizal species that associates with hardwoods and mixed conifers in the California coast. It has a reddish/pink cap (fades brown), yellow pores that stain instantly blue when injured, and an olive brown spore print. Check out this brightly colored Bolete demonstrating some interesting chemistry. As far as I can tell, this is #Lanmaopseudosensibilis, formerly known as #Boletuspseudosensibilis. This is a mycorrhizal Bolete that associates with oaks in upland hardwood forests. Reveling in New England summer I cut open this beautiful Bolete to see the brilliant yellow flesh quickly stain a dark blue. This is a Liver Bolete (Suillellus amygdalinus) I found upturned by an animal. Given that it would mold away into nothing after a couple of days, I decided to cut it up to demonstrate the chonky texture and distinctive blueing reaction (caused by oxidation of organic acids).
